This is a cutting edge and creative version of one of the classics of our Mediterranean diet: Ham and Melon.

One of the fields in which the creativity of a team of professional chefs such as “La Roja” is truly shining is in the updating and review of the traditional dishes and combination of our cuisine, duly modernising and enhancing them as they are. This is the case of Ham with Melon. A classic of our Mediterranean cuisine that we have all tried at some point, and which is actually one of those dishes that one would think has no room for improvement. Well, you should indeed try out our suggestion and see for yourself that anything is possible: YES WE CAN


1.- HAM:

200g FISAN Gran Reserva Acorn-Fed Ibérico Ham, very thinly sliced

2.- Melon:

200g melon
1 litre of water
1 lime
10g sugar


1 Swiss chard stalk

4.- Modena balsamic vinegar


1.- Once sliced, put the FISAN Gran Reserva Acorn-Fed Ibérico Ham to one side and reserve.

2.- Clean the melon. Combine the water, sugar and lime juice. Vacuum pack the melon with the liquid mixture and let it macerate for 10 minutes. Once the time has elapsed, take the melon out and cut it into the shape you want to use.  

3.- Clean the stalk of the Swiss chard, slice it very finely and put it into freezing cold water so that it will be crunchy.

Place the pieces of melon on the plate, drizzle it with a touch of Modena balsamic vinegar and pile the slices of FISAN Gran Reserva Acorn-Fed Ibérico Ham and the Swiss chard slices into a beautiful mound. Finish off the dish with a few sprouts, a few flakes of salt and a few drizzling of olive oil.  

Freshness, tradition and respect for all products… combined with a touch of creativity and the result is a refreshing dish reminiscent of the original while in turn making it updated and top-notch. A flavour that we can call our own, and well worth waiting for the summer to enjoy it.
