More than four years of continuous selection to choose from among our Gran Reserva Acorn-Fed Ibérico Hams are needed in order to select those that will form our LIMITED EDITION, the very best that our cellars have to offer.
In like manner to every single year when autumn comes to its end, FISAN takes pleasure in presenting our LIMITED EDITION Gran Reserva Acorn-Fed Ibérico Hams. This year only twenty-five pieces corresponding to the 2008 year have been chosen and these are precisely the hams that have passed with flying colours all the stages involved in the selection process.
This process first starts by taking note of the pieces that stand out the most in accordance to their morphology when they are out pasturing in the meadows and with the observation of their behaviour during the free-ranging period. The goodness of this first analysis (fruit of almost one hundred years of experience) has then to be confirmed with a painstaking study of the most significant data obtained once the animal has been slaughtered: concentration of monounsaturated fats (oleic acid) and its proportion with regards to the muscle tissue, which represent objective values that along with its shape will allow us to select the most promising pieces from amongst all those that reach our facilities.
Following this pre-selection and once the first processing stages of the ham have elapsed (salting, drying and first few months hanging to cure in the cellars), then about one hundred candidates are pointed out that may become part of our LIMITED EDITION. During the next few years we carefully and personally watch over their evolution until the end of October comes along every year, when the leading stars of each season are finally selected.
As already mentioned, this year twenty-five hams have reached the end of this extraordinary process of selection. Once they have been wrapped up in their packaging and placed in a characteristic box these outstanding hams will reach twenty-five privileged tables where, as happens to all acorn-fed Ibérico hams with these characteristics, they will be quickly consumed (between one and five days as of being carved open) and they will always be enjoyed freshly carved by hand, slice after slice.
