These 4 numbers correspond to the exact date on which the piece begins the healing process (starting for salting).
In this case, (06) would be the week of the year (with which you can know the month) and then the year (4) in this case 2014. Considering that the sacrifice period of the acorn-fed pigs is from December 15 to March 30 and that the salting began in February (week 6 of the year) the seal indicates that this pig has enjoyed the "montanera" and will be a ham of better quality.
