All the goodness of this campaign will be making its debut for the public with the FISAN Acorn-Fed Sausage Meats and FISAN Gran Reserva Ham

One of the best Acorn seasons in the last few years (montanera 2013) came to its end on the past March 31. Hence the reason why today the magnificent sausage meats that are fruit of the extraordinary quality of this season’s “montanera” are already hanging to cure in the dry sheds and cellars.  

Since these are the first that we will be able to enjoy as of the end of May or June, we would like to take advantage of this end-of-campaign post to introduce you to the main characteristics of our range of sausage meats.  

First of all we would like to mention that at FISAN we only use the best parts of the Ibérico Pig meat. These are the “presas”, “plumas”, “crucetas”… which now have already taken up their rightful place in Spanish gastronomy. The “grinding” gauge we use for the pieces of meat is proportional to the calibre of each sausage meat, resulting in the Longaniza (both the red and the black) being the finest of them and the Morcón de Bellota being the coarsest of them all.  

In the case of the seasonings used for each variety, we exclusively employ spices and condiments of premium quality: Salt from the Torrevieja Salt Lakes (Alicante), Garlic from Jaraiz de la Vera, Pepper from Málaga and Sweet/Spicy Paprika from La Vera. However, we do not have a single recipe for all the varieties. Each one needs its own formula that profits the different curing periods to a maximum, hence culminating in a characteristic flavour. This is precisely the reason why each one of our sausage meats is a unique experience for the palate.
