This year twenty-two extraordinary FISAN GRAN RESERVA Acorn-Fed Ibérico Hams have passed all the controls and exigencies to form part of the 2009 LIMITED EDITION

More than four years of constant selection are necessary in order to choose from among our Gran Reserva Acorn-Fed Ibérico Hams those that will form part of the year’s LIMITED EDITION. Hence, at FISAN every campaign towards the end of autumn we truly take pleasure in presenting our FISAN LIMITED EDITION GRAN RESERVA Acorn-Fed Ibérico Hams. This year only twenty-two hams corresponding to the year 2009 have passed the exacting controls to become part of the LIMITED EDITION.  

The selection process starts right out in the meadows, watching over the Ibérico pigs that stand out the most in that pertaining to their morphology and observing their behaviour during their free-ranging period. Once the animals have been slaughtered, we pay special attention to their concentration of monounsaturated fats (oleic acid), the proportion of the same with regards to the muscle tissue, which represents a series of objective values that along with the shape of the ham will allow us to select the most promising pieces.  

Once these pieces have been pre-selected and undergone the first stages of preparation of the ham (salting, drying and the first few months hanging in the cellars), then about one hundred candidate hams that may turn into our LIMITED EDITION are marked. During the next few years we constantly check on their evolution until the end of October of each year comes around, which is when the hams that will hold the starring role each season are finally selected.  

As mentioned above, this year twenty-two hams have made the cut and reached the end of this extraordinary selection process. Once they are all wrapped up in their packaging and put into the characteristic boxes they will reach another twenty-two privileged tables where, as in like manner to all Acorn-Fed Ibérico Hams with these characteristics, they are quickly consumed (in 1 to 5 days after being cut open) and always hand-carved right before serving.
