The acorn-fed FISAN longaniza salchichon, a type of sausage, is one of the most traditional, yet less known traditional products from Guijuelo. It is distinguishable by its light traces of paprika and its exquisite aroma. Its acorn-fed pork meat has never been frozen, according to traditional customs. The curing process takes place in natural dryers, a great factor in forging its character.
