Each piece has been carefully selected by the FISAN family from its origin in the dehesa, where our pigs have been reared with matchless dedication.<br \/><br \/>Our Limited Edition Alta Gastronomia ham, 2021 Vintage, is the result of one of the best montaneras in the last 25 years. The abundance of rain and generous fruit yield allowed the pigs to graze freely, covering vast distances and eating up to 9 kg of food per day. It was an excellent year for pigs to reach the optimum infiltration and weight to produce hams of unrivalled delicacy.<\/p><p>\u00a0<\/p><p>This ham reaches its fullness after a slow and lengthy <b>60-month <\/b>curing process in cellars that respect the natural course of time. When cut, it reveals a <b>bright marbling with ruby and purple hues<\/b>, while its white and silky infiltration melts in the mouth.
