400;\">Litt\u00e9ralement, le jambon est la patte arri\u00e8re du cochon. La partie charnue de la patte serait la \u00ab cuisse \u00bb du cochon. Pour pouvoir d\u00e9guster la viande d\u2019un jambon Ib\u00e9rico, celle-ci doit passer par un processus d\u2019\u00e9laboration et affinage. Tout commence par le processus de salaison. \u00c0 cette \u00e9tape, <b>la pi\u00e8ce de jambon Ib\u00e9rico est recouverte de sel<\/b> pour favoriser sa d\u00e9shydratation et sa conservation. Ensuite, elle passe par le processus de lavage, suivi du processus de s\u00e9chage o\u00f9 d\u00e9bute l\u2019affinage du jambon de fa\u00e7on naturelle, pour finir par le processus de maturation o\u00f9 elle repose pendant plusieurs mois dans les caves.     <\/span><\/p>\n<p>Les parties comestibles du jambon Ib\u00e9rico sont la noix, la sous-noix, le grasset, la pointe et le Ib\u00e9rico FISAN sont des aliments riches en prot\u00e9ines, acide ol\u00e9ique avec un apport consid\u00e9rable de min\u00e9raux et vitamines, ce qui fait de la viande du jambon un aliment parmi les plus sains de la gastronomie espagnole. <\/p>\n<p>Les propres graisses du jambon en font un produit tr\u00e8s sain, qui aide \u00e0 augmenter les taux de cholest\u00e9rol HDL (le bon cholest\u00e9rol) et \u00e0 r\u00e9duire le mauvais cholest\u00e9rol (LDL), comme le d\u00e9montrent des \u00e9tudes sur le jambon de Bellota.<\/p>\n<p>De plus, le jambon Ib\u00e9rico offre un apport
