consiglia di eseguire il rituale completo.<\/p>\n<p>La prima cosa da tenere in considerazione \u00e8 la temperatura. Si consiglia di tagliare il prosciutto a <strong>temperatura ambiente<\/strong> (20-22\u00b0) affinch\u00e9 inizi a &#8220;sudare&#8221;, a fondersi con il proprio grasso e a mettere in risalto tutto il suo aroma. Non deve mai essere tagliato freddo. L&#8217;ideale sarebbe impiattarlo non appena tagliato affinch\u00e9 le fette vengano toccate il meno possibile e non vengano danneggiate n\u00e9 perdano il proprio aroma.    <\/p>\n<p>Si consiglia di collocare <strong>un solo strato di fette di prosciutto sul piatto<\/strong> affinch\u00e9 queste non si rovinino con lo strato superiore. Di norma si servono porzioni da 80 a 100 grammi per piatto. Le fette vengono normalmente collocate dall&#8217;esterno verso l&#8217;interno, con il grasso rivolto verso il centro del piatto, leggermente sovrapposte le une con le altre. dalla luce diretta del sole. La temperatura deve mantenersi tra i 18 e i 20\u00b0. Una volta aperto, si consiglia di utilizzare lamelle del suo proprio grasso per coprirvi le zone del taglio. \u00c8 importante che non siano lamelle della corteccia (grasso giallo esterno) ma degli strati inferiori. Si consiglia di coprire questa superficie con una pellicola e collocarvi un copri prosciutto o un panno di cotone per proteggere la zona tagliata dall&#8217;ambiente e dalla luce.    <\/p>\n<p>Nel caso in cui il prosciutto si consumi rapidamente, si consiglia di iniziare a tagliarlo dal fiocco, ovvero con lo zoccolo verso l&#8217;alto. Se invece vogliamo conservarlo aperto pi\u00f9 tempo, si consiglia di iniziare a tagliare dal cosciotto, cio\u00e8 con lo zoccolo verso il basso.
