Dopo aver triturato la carne e averla miscelata e condita, si ottiene un impasto omogeneo che si lascia riposare a basse temperature, a circa 4 gradi centigradi, affinch\u00e9 fermenti e possa essere insaccato. Temperata e compatta, la carna \u00e8 pronta per essere inserita all&#8217;interno della trippa.   <\/span><\/p>\n<p><span style=\"font-weight: 400;\">Tutti i nostri lomo, chorizo e salchich\u00f3n di bellota vengono insaccati in trippa naturale.
