do porco. A parte carnosa da perna seria a &#8220;coxa&#8221; do porco. Para poder desfrutar da carne de um presunto ib\u00e9rico, esta tem que passar por um processo de elabora\u00e7\u00e3o e cura. Em primeiro lugar, realiza-se o processo de salga em que a <b>pe\u00e7a de presunto ib\u00e9rico \u00e9 coberta com sal<\/b> para favorecer a desidrata\u00e7\u00e3o e conserva\u00e7\u00e3o da mesma. Posteriormente, passa pelo processo de lavagem, seguido do processo de secagem, em que come\u00e7a a cura do presunto de forma natural, para terminar com o processo de matura\u00e7\u00e3o, no qual ir\u00e1 repousar durante meses nas caves.     <\/span><\/p>\n<p>As partes comest\u00edveis do presunto ib\u00e9rico s\u00e3o a maza, contramaza, babilla, punta e saud\u00e1veis \u200b\u200bda gastronomia espanhola. <\/p>\n<p>As gorduras pr\u00f3prias do presunto fazem com que seja um produto muito saud\u00e1vel, ajudando a aumentar o colesterol HDL (colesterol bom) e a reduzir o colesterol mau (LDL), tal como mostram os estudos sobre o presunto de bellota.<\/p>\n<p>Al\u00e9m disso, o presunto ib\u00e9rico apresenta um aporte importante de nutrientes,
