The Standard

IBÉRICO QUALITIES

The quality standard for meat, ham, shoulder ham, and loin (Royal Decree 4/2014) establishes the quality requirements to be met and the system for their identification by means of a seal or label. This standard is a firm commitment by the Ministry to ensure quality, transparency, and information about the characteristics and conditions of the manufacturing process of Ibérico products; so that consumers may make the right decision according to their needs at the time of purchase.

The label must include the products’ sales description. Hence, there are classifications for Ibérico ham: bellota, cebo de campo, or cebo. The product label must also include the percentage of Ibérico breed.

IBÉRICO CATEGORIES

Colour seals

BELLOTA 100% IBÉRICO HAM

Black seal.

Only Bellota 100% Ibérico Ham, Shoulder Ham, and Loin.

This label guarantees that:
1. The pig’s mother and father are 100% Ibérico breed.
2. The animal has fed on bellotas and other natural resources in the dehesa during the fattening period.

BELLOTA IBÉRICO HAM

Red seal.

Bellota Ibérico Ham, Bellota Ibérico Shoulder Ham, and Bellota Ibérico Loin. They can be 75% Ibérico breed or 50% Ibérico breed.

This label guarantees that:
1. The mother is 100% Ibérico breed, and the father can be 50% Ibérico breed (the result being 75% Ibérico breed) or a Duroc pig (the result being 50% Ibérico breed).
2. The animal has fed on bellotas and other natural resources in the dehesa during the montanera stage.

CEBO DE CAMPO IBÉRICO HAM

Green seal.

Identifica al Jamón de Cebo de Campo Ibérico, Cebo de Campo Ibérico Ham, Cebo de Campo Ibérico Shoulder Ham, and Cebo de Campo Ibérico Loin.They can be 100%, 75%, or 50% Ibérico breed.

This label guarantees that:
1. The pig’s mother and father are 100% Ibérico breed, or the mother can be 100% Ibérico breed and the father 50% Ibérico breed (the result being 75% Ibérico breed), or a Duroc pig (the result being 50% Ibérico breed).
2. The animal has fed on natural pastures and feeding stuffs during the fattening period.

The origins

A unique ecosystem worldwide because of its peculiarities, biodiversity, and natural wealth, characteristic of the southwest of the Iberian Peninsula, the dehesas selected by FISAN are extensions of holm oak forests that have withstood the test of time.
