The pieces are carefully chosen by our expert ham sniffers or caladores after 48 months for ham, and 30 for shoulder ham. Both loin and cured meats are also cured in our cellars for 30 days to absorb all the aromas that provide them with their uniqueness.

Our Haute Cuisine Limited Edition Hams are the product of thorough work and a meticulous selection from their origin in the dehesa, after which they are given the utmost care for around 60 months. During this period, they are cured with gentleness and patience in the dark and quiet atmosphere of our natural drying rooms and cellars.
