FISAN’s Montanera Selection Pack is a tribute to that short period of the year when the dehesa thrives in full splendour. A display of oily textures and nuances that only fresh bellota meat cuts can provide.

 

FISAN introduces an exclusive selection, especially designed for gourmets and foodies who seek to discover the dehesa’s purest essence in their kitchens. This pack gathers the Iberico pig’s noblest and most appreciated meat cuts from the current montanera campaign to ensure outstanding freshness and quality.

 

This exclusive selection includes four of bellota Iberico pork meat’s noblest cuts:

 

  • Bellota Iberico sirloin steak: A superior cut with a smooth texture, particularly recommended for gourmets who seek to savour the taste of pure bellota meat.
  • Bellota Iberico presa cut: It stands out for its juiciness, provided by its remarkable intramuscular marbling. Presa meat offers an explosion of aromas that recall nuts and the field, becoming one of the most coveted cuts of the montanera.
  • Bellota Iberico pluma cut: Perfectly balanced, an iconic meat cut that is notable for its slender shape and fat marbling, which, when heated, boosts its luscious character and unmistakable aroma.
  • Bellota Iberico jowl: A must-have piece in Spanish cuisine. It is pure succulence, a cut that, after slow cooking, discloses a unique oiliness, imbued with nuances of the natural diet of free-range Iberico pigs.

COLOUR: Red meat and white fat.
AROMA: Meaty, characteristic of medium-low intensity and durability. Free of any foreign smell.
TEXTURE: Firm.

Conditions of conservation: 
Vacuum packed. Approximate weight 0.700 kg. Frozen product. Frozen storage -18ºC. Best before for frozen product: 36 months from date of freezing.
SUGGESTED CONSUMPTION: 

Take out the meat and allow it to thaw before cooking it so that it reaches room temperature.
Once thawed, do not freeze again.
Consume the product after cooking or after a preparation process.
