FISAN Bellota Iberico Coppa is characterized by its flavor, its soft texture and its deep aroma, since the head wraps the prey and the coppa is actually this part of the loin of the acorn-fed pig. Cabecero is the upper part of the pork loin that is characterized by its infiltration of fat, which gives it unique organoleptic qualities: flavor and juiciness.
Our Iberico bellota iberico coppa is made with the traditional marinade for the FISAN sausage, with sweet paprika being the main ingredient with which this piece is seasoned. At no time during its preparation is its meat frozen. Its careful curing is carried out in natural drying rooms, which gives it a marked character.
