The Ham Limited Edition Alta Gastronomia 2012 consists of a selection of 55 ham pieces of the most extraordinary FISAN Alta Gastronomia Ham, cured for more than 60 months in natural cellars in a dark and quiet atmosphere, with great care and large doses of patience. Perfection is achieved when, more than four years after its selection, this ham is consumed at a temperature of around 22˚ C. Its flavour is sweet and lingering, its aroma rich and fresh, and its colour dark pink, with an excellent fat marbling that gives it its melt-in-the-mouth texture. Tasting recommendations include always slicing it with a carving knife and consuming it within a short period of time, not more than five or six days, due to its fast oxidation once opened.
YEAR 2012
Due to the weather conditions, the montanera was characterized by fruit scarcity in the dehesas. Nevertheless, as a result of the late autumn rains, although not plentiful, the bellotas were large and high quality, contributing to a superior campaign with fewer pieces.

Whole piece: Store in a cool, dry place. Sliced: Store in a cool, dry place. To prepare the product and fully enjoy its organoleptic characteristics, once the seal has been broken, let it rest for a few minutes outside the vacuum. Once open, consume within 4/6 days.
