The selection of our Alta Gastronomia Limited Edition Hams begins already in the dehesa, and they are handled with utmost care for around 60 months. During such time, they are meticulously and patiently cured in natural drying rooms and cellars, surrounded by a dark and quiet atmosphere. The recommended temperature to enjoy the ham’s rich and fresh aroma, dark pink colour, perfect fat marbling and melt-in-the-mouth texture is 22º C. An exquisite limited edition. Organoleptic characteristics: 

Colour: Dried fruit hints and the sweet hues of bellotas blend with the perfect amount of salt. Homogeneous bright reddish colour. Tender and syrupy mouthfeel, with a very aromatic and lingering flavour on the palate. Aroma: characteristic of curing. Appearance: firm and juicy.
