FISAN has selected 55 pieces from the Ham Limited Edition Alta Gastronomia 2014 that meet the organoleptic requirements to be included in this exclusive selection that epitomizes the height of best practice of an almost centenarian company like FISAN. Chosen from the raising stages in the dehesa, these pieces have been cured for 56 to 60 months in natural drying rooms and cellars, in a dark and quiet atmosphere, with great care and large doses of patience. The recommended temperature to enjoy the ham’s rich and fresh aroma, dark pink colour, perfect fat marbling and melt-in-the-mouth texture is 22º C.
