PRODUCT DESCRIPTION

This acorn-fed ham is part of the LIMITED EDITION of VINTAGE YEAR 2019.

To celebrate a hundred years of excellence in the production of acorn-fed ham. FISAN has chosen the best pieces, selected from their rearing in the meadows. These pieces have been cured with care and patience during approximately 60 months in natural dryer chambers and cellars with darkness and silence.

The dedication and care we have put into their ageing and subsequent production is reflected in these exceptional pieces that we present year after year at FISAN.

We recommend consuming the ham at a temperature of 22º C to truly appreciate its deep and fresh aroma, its dark pink hues and its exquisite intramuscular fat, which gives it the texture that makes it melt in your mouth.

The montanera grazing period was late, but with optimal results. Our pigs enjoy between 2 and 4 hectares of the best pastures in Extremadura and Andalusia, more than double the amount required by the quality standard for Iberian pigs.

Organoleptic characteristics: 

Colour: The hints of dried fruits and nuts stand out, as well as the sweet tones typical of acorns and thanks to the optimum salt content. Homogeneous bright reddish colour.
Its flavour is smooth and mellow, with an aromatic taste that lingers on the palate.
Odour: Characteristic cured odour.
Appearance: Consistent and juicy.
