The pieces are carefully chosen by our expert ham sniffers or caladores after 48 months for ham, and 30 for shoulder ham. Both loin and cured meats are also cured in our cellars for 30 days to absorb all the aromas that provide them with their uniqueness.
Our Haute Cuisine is recognized by the best chefs in the best Spanish restaurants and now also from all over the world. In these temples of gastronomy, only products with a very high quality standard are chosen to appear on their menus.

A product of exceptional quality, Limited Edition Alta Gastronomia ham, 2021 vintage, is the reflection of a unique montanera. Each piece has been carefully selected by the FISAN family from its origin in the dehesa, where our pigs have been reared with matchless dedication.
This ham reaches its fullness after a slow and lengthy 60-month curing process in cellars that respect the natural course of time. When cut, it reveals a bright marbling with ruby and purple hues, while its white and silky infiltration melts in the mouth. To appreciate its full complexity, tasting is recommended at 22ºC, which is the perfect temperature for it to completely display its flavours and aromas.
