This acorn-fed ham is part of the CENTENARIO EDITION of Vintage Year 2015.

To celebrate a hundred years of excellence in the production of acorn-fed ham, FISAN has chosen the best pieces, selected from their rearing in the meadows. These pieces have been cured with care and patience during approximately 100 months in natural dryer chambers and cellars with darkness and silence.

A meticulous personal choice of the Sanchez family, representing our commitment to tradition, expertise and supreme quality.

We recommend consuming the ham at a temperature of 22ºC to truly appreciate its deep and fresh aroma, its dark pink hues and its exquisite intramuscular fat, which gives it the texture that makes it melt in your mouth.

Vintage year 2015

The Montanera period (when the pigs graze in the meadows) this year was very fruitful and with very regular weather conditions, both in temperature and in rainfalls. This ensured the acorns were preserved and used optimally.

The pig herds enjoyed a large amount of acorns during a long period of time, which allowed them to grow at the appropriate rate.

Minimum curing:

100 months – 2015

Organoleptic characteristics:

Colour: Lots of herbal and nutty nuances. Bright purple colour and abundant infiltration.
Tasting: A great deal of herbal and nutty nuances. Vibrant lean meat of a deep pink hue with abundant infiltration. Smooth and lasting aftertaste with strong sweet tones.
Odour: Characteristic cured odour.
Appearance: Consistent and juicy.

Conditions of conservation:

Store in a cool, dry place.
